2 Pressure Cooker Chicken Recipes

Taking some chicken into a slow cooker may seem good but you have to try the “fast cooker” occasionally. What I mean by “fast cooker” is absolutely the pressure cooker. This appliance works on steam pressure which is the opposite of the slow cooker. Are you searching for the pressure cooker chicken recipes? Check them below.

  1. Pressure Cooker Italian Chicken

Yields: 6-8 Servings

Ingredients:

1 tablespoon olive oil

¾ c. onion

½ c. green bell pepper

½ c. red bell pepper

¼ tablespoon salt

¾ c. marinara

2 lb chicken breasts

2 tablespoons pesto

¾ c. mushroom (thinly sliced)

Directions:

  • Turn your pressure cooker to sauté and add olive oil, onion, bell peppers along with salt. Saute for about 4 minutes until the vegetables are soft. Add the marinara, pesto and chicken. Cook chicken on high pressure for 12 minutes. Turn the pressure valve to “vent” to release all of the pressure.
  • Transfer the chicken breasts to a plate of cutting board. Shred the chicken using forks.
  • Remove 2/3 cup of liquid from the pot (leave the vegetables). Add the mushroom to the vegetables and set to sauté for only 2-3 minutes.
  • Return the shredded chicken to the pot and stir until well combined.
  1. Pressure Cooker Salsa Verde Chicken

Yields: 6-8 Servings

Ingredients:

1 c. salsa verde

2 lb chicken breasts

¾ c. onion

Directions:

  • In a slow cooker, add in the onion, salsa verde and chicken. Cook thawed it on high pressure for 2 minutes. Turn the pressure valve to “Vent” in order to release all of the pressure.
  • Remove the chicken from the pot and place on a plate. Shred the chicken.
  • Remove 2/3 cup liquid from the pot and then return the shredded chicken to pot. Stir until well combined.
  • Top chicken with green onions.
